Yummy cookies that you won't feel guilty(well, not too guilty) about eating.
Ingredients are approximate as I have never measured them, depends what I have available at the time. I only use ingredients I consider beneficial.
About 100gms of ground almond meal " 1 big cup of chopped almonds(in the processor) " 1/3 cup of pure maple syrup(not imitation) " 1/2 tspn cinnamon " 1/3 cup of currants " !/2 cup chopped sunflower seeds or pumpkin kernals 2 table spoons(!!!) of cold pressed flaxseed oil Small amount of water.
Put all ingredients in bowl and blend well with hands. Only add as much water as you need for them to bind. Squeeze into oval , flatish balls with your hands, and put onto lightly greased baking tray( or baking paper). Cook at about 350 degrees for 15-20 mins until light brown. Cool before eating and be careful when removing from tray as they want to break up till they get cold.
You will have to experiment with the amount of maple syrup you use, but I just use enough to lightly sweeten. Used to use rice syrup until I found out about the extra stand of dna.
Also the currants will sweeten them, I use currants because of the vit b17 they contain(anti cancer vitamin).
Flaxseed oil in prefence to other oils because of the omegas but also contains lots of B17.
My freinds like them much better than regular cookies so I hope you guys like them, too. Bon apetite!
